Description:... Excerpt from The Grocer's Encyclopedia: A Compedium of Useful Information Concerning Foods of All Kinds, How They Are Raised, Prepared and Marketed, How to Care for Them in the Store and Home, How Best to Use and Enjoy Them and Other Valuable Information for Grocers and General Storekeepers This book is the product of many such minutes stolen out of the hours of a very busy life, at irregular intervals, during a period of about thirty years.
In 1882, realizing that the Grocers and General Storekeepers of the United States greatly needed a book giving information on many points relating to their business, I attempted to supply that want, and issued The Grocer's Handbook. Time and money, as well as personal experience and proper cooperation on the part of others, were denied me, and it is with a feeling of shame that I refer to that crude but well intended effort. Perhaps the present volume is its best apology.
